Why do we say 'let the cat out of the bag'?

Possibly from market fraud: vendors supposedly substituted pigs with cats in bags. Letting the cat out revealed the deception. Another theory links to the cat o' nine tails (whip) being removed from its bag before flogging. It means revealing a secret.
